Soup with pasta and vegetables
This soup of pasta and vegetables is a basic recipe that will solve the dilemma of the dinner on many occasions and you will feel good on those days when it is raining outside and it is cold … and what you most want is a warm and comforting dish .
chicken (breast, medium)
turnip (1 piece)
celery (half branch)
carrot (1 pc.)
peas (a handful)
short pasta (shells, stars or pistons)

To make this soup of pasta and vegetables, the first thing we should do is prepare the vegetables. Peel the onion and sprinkle it in fine brunoise. Also chop the tomato in small cubes. Although it is not necessary, if you prefer you can peel it before … the best way to do it, in that case, is scaling them, that is, submerging them in boiling water for 40 seconds and then passing them to a water bath with ice. This is how they peel very easily.
Peel the carrot and put it in small cubes. Peel also the turnip and do the same with it. Clean the leek by removing the roots, the green and hard part and the first layers. Once you have your heart, pinch it often. Finally, peel the potato and dice it.
Bring a large saucepan over a fire with a little thread of oil and sauté the vegetables for a few minutes, over a low heat, until the onion softens and begins to clear.
Add the vegetable broth and bring to a boil. The moment you start to boil, also incorporate the pasta and the chicken breast into thin strips and put to the point of salt. Let boil for 20 minutes.
Serve your soup of pasta and vegetables very warm and garnish with some aromatic herbs: fresh rosemary, parsley, cilantro … the one you like the most!
